… i don’t want to use a hub to link up 2 computers, and i’m wondering if connecting 2 pcs using a serial cable would allow me to play 1vs1 against another person on another pc???

yes, just click on LAN connection in the menu, one of you will need to create the game and the other person joins it.. you can add as many players as you like, including computer players, so you and your friend could be on one team and computer players on the other team.
obviously you will need a copy of AOE2 for each computer.
